It is the excrement of the animal’Luwak ’(Asian civet) after eating the coffee cherries. Indeed, the digestion of the animal allows us to give a flavor to the coffee beans. It is precisely the manufacturing process that makes the reputation, rarity, and price of this exceptional coffee!

It all starts in a coffee plantation when the coffee tree produces its fruits inside which is the famous seed that interests us. These small red berries attract a small animal: the Paradoxurus Hermaphroditus! In French, it hermaphrodites the palm civet….

As for the name, it is not yet too much, so we will opt for the Indonesian version, shorter and simpler: the Luwak (pronounced Luwak). Basically, it is an animal between the cat and the weasel. In Indonesian, the coffee is called «Hopi», so this famous coffee is called KOPI LUWAK! Luwak loves coffee fruits! It is given away with the meat of the fruits but also swallows the seed that it will not be able to digest.

This is where the process becomes a little unpleasant…. The coffee growers collect the droppings of this animal to collect the coffee beans. Hence the name "cat poop coffee". The Luwak cannot fully digest the coffee bean, but the digestive juices in his stomach will continue to attack the surface of the seed. It is in fact this part of the process that will make this rare coffee so special. It becomes much less acidic!

Of course, the coffee is collected in the droppings of these animals, then cleaned, peeled by hand, roasted in the pan, and finally ground before use. The result is exceptional, we obtain a coffee with a very balanced aromatic profile, very sweet.
Not too sour, not too bitter!
It is an exceptional coffee, very good, very balanced, in Indonesia, you can enjoy a cup of this coffee in most of the plantations.

Kenya, Peru, Central America, and Jamaica are also important coffee producers. Kenyan coffee is often sour and highly aromatic. Peru offers fine coffees, with a delicate and slightly acidic flavor.
